  • 2 branzini cleaned
  • 200 g cherry tomatoes halved
  • 90 ml white wine
  • 90 ml water
  • 2 cloves garlic
  • 1 chili pepper
  • parsley to taste, chopped
  • extra virgin olive oil to taste
  • salt to taste
  • pepper to taste

Method
 

  1. Clean the branzini by removing the entrails, rinse well under running water, and dry with paper towels.
  2. In a large skillet, sauté the whole garlic cloves with a drizzle of extra virgin olive oil and the chili pepper.
  3. Add the halved cherry tomatoes and sauté for a few minutes.
  4. Place the branzini in the skillet and brown them on both sides.
  5. Deglaze with white wine and let the alcohol evaporate.
  6. Add the water, season with salt and pepper, cover with a lid, and cook over medium heat for about 15-20 minutes or until the fish is cooked through.
  7. Before serving, sprinkle with fresh chopped parsley.

Notes

For a more intense flavor, let the fish marinate with herbs a few hours before cooking. Serve with crusty bread to soak up the delicious broth.
