- 4 whole wheat bread rolls (approx. 120g each)
- 200g shredded chicken sloppy joe (see below)
- 150g smoked mozzarella cheese
- 1 chopped onion
- 2 chopped carrots
- 2 minced garlic cloves
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions
- Prepare the shredded chicken sloppy joe: In a large skillet, heat the olive oil and sauté the onion, carrots, and garlic until tender. Add the chicken, salt, and pepper, and simmer for about 10 minutes. Stir in the lemon juice.
- Prepare the bread: Slice the whole wheat rolls in half and lightly toast them with a little olive oil.
- Assemble the sandwich: Spoon the shredded chicken sloppy joe onto one toasted bread half, top with smoked mozzarella, and cover with the other toasted half.
- Cook the sandwich: Bake the sandwich in a preheated oven at 180°C (350°F) for about 5 minutes until the cheese is melted and golden.
- Alternative cooking: If you don’t have an oven, you can cook the sandwich in a large skillet with a little olive oil until the cheese is melted and golden.
Notes
- For a touch of color, add a tablespoon of Dijon mustard to the chicken sauce.
- Use a vegetarian alternative to onions and carrots, such as mushrooms or celery, if desired.
- Add a tablespoon of chopped chives or some chopped onion for a fresh touch.
