Ingredients
Scale
- 500g cubed turkey breast (pork alternative)
- 2 tbsp olive oil
- 2 tbsp orange juice
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- ½ tbsp black mustard seeds
- ½ tbsp fresh chopped basil
- Salt and pepper to taste
- For the cookies:
- Flour
- Sugar
- Salt
- Egg yolks
- Cream cheese (implied by ‘formaggio di cesare’)
Instructions
- Prepare the caramel sauce: In a large skillet, heat the olive oil over medium-high heat. Add the cubed turkey and cook until golden brown on all sides, about 5-6 minutes. Remove the turkey from the skillet and set aside on a plate.
- In the same skillet, add the orange juice, honey, apple cider vinegar, and black mustard seeds. Bring to a boil over medium heat and cook for about 2-3 minutes, until the sauce has slightly thickened.
- Add the fresh chopped basil to the sauce and stir well. Return the turkey to the skillet and coat with the sauce. Let it cook for another 2-3 minutes, until the turkey is cooked through and the sauce is coating it.
- Prepare the cookies: In another skillet, heat olive oil over medium-high heat. Add flour, sugar, and salt. Cook for about 2-3 minutes, until the mixture is golden and you can smell an intense cookie aroma.
- Add the egg yolks and mix well. Incorporate flour and sugar until the mixture is homogeneous.
- Shape the cookies and place them on a baking sheet lined with parchment paper.
- Bake the cookies at 180°C (350°F) for about 12-15 minutes, until golden and cooked.
- Remove the cookies from the oven and let them cool for about 5 minutes.
- Once cooled, place the cookies on a plate and top with the caramel sauce (and presumably a cream cheese element, based on the title).
- Serve the caramel cheesecake cookies warm, garnished with extra fresh basil if desired.
Notes
- Use good quality olive oil for an intense flavor and golden color.
- Feel free to substitute the turkey breast with chicken or duck breast if you prefer.
- Use an electric mixer to mix the caramel sauce and the cookies.
- Do not overload the cookies with the caramel sauce; let it coat them evenly.
